This non-alcoholic twist on the classic Kir Royale is everything a holiday cocktail should be; elegant, effortless, and quietly celebratory.

A touch of framboise brings warmth and depth, balanced by the crisp effervescence of our Neue Brut. It’s festive without the fuss; the kind of drink that feels just as right for a dinner party toast as it does for a quiet night in.

The classic Kir Royale was first served in postwar Burgundy, made with dry Champagne and Crème de Cassis; a blackcurrant liqueur known for its deep color and lush fruit flavor. It’s a cocktail that’s always been about balance: sweetness and acidity, celebration and restraint.

At II Bar, this reimagined version keeps the essence of the original, that same elegant contrast, but replaces the Champagne with Neue Brut, our dealcoholized sparkling Chardonnay from La Mancha, Spain. Its crisp minerality and biscuity finish make it the perfect match for the rich, raspberry-forward liqueur, creating a cocktail that feels indulgent yet refreshing.

Non-alc Kir Royale recipe card

Ingredients

½ oz (1 tbsp) Non-Alc Framboise or Cherry Syrup
5 oz chilled Society De La Rassi Neue Brut
Optional garnish: 1 fresh raspberry or a lemon twist


Instructions

Pour the framboise into a chilled champagne flute.
Slowly top with chilled Neue Brut.
Garnish with a raspberry or lemon twist.
Serve immediately.
